IDDSI FRAMEWORK EXPLAINED

By Julindi Engelke

What is IDDSI?
International Dysphagia Diet Standardisation Initiative
It is a global standard with terminology and definitions to describe texture modified foods and
thickened liquids for individuals with dysphagia of all ages, in all care settings, and for all
cultures.
The IDDSI framework consists of 7 levels. Each level is identified by labels, numbers and
colours. Each level has its own testing methods. These testing methods are used to ensure
consistent production.

What is the IDDSI framework?
Some people have difficulties when it comes to chewing or swallowing food. Thus,
implicating that some foods and drinks are a danger for choking. Therefore, the IDDSI has
developed a global standardized way of describing food and drinks that are safest for people
with Dysphagia.

The framework consists of simple measurement methods.
